According to 2020 TUIK data, the amount of waste collected was 32.3 million tons. The average daily waste per person was calculated as 1.13 kg, and this rate continues to increase day by day.
BigChefs, within the scope of its zero-waste kitchen strategy, has prepared the “Kitchen of Tomorrow” menu in collaboration with chef Tommaso Arrigoni. The objective is to ensure that no flavor story comes to an end in the kitchen.
